Getting in shape with raw cake

I love cake but cake is full of carbohydrates, fat and sugar.It's  so rich of bad "nutritions" so I thought there must be a healthier replacement for it. I came on the taste of raw food through a friend of mine,whose family eats quite raw.It means just fruits,vegetables, nuts and seeds which are unprocessed,and not heated over 42.5°( enzymes break over 42.5°).Sounds strange - tastes jummy!!

 

Raw Berry Cheesecake

Ingredients:

  • 100 g Macadamia nuts
  • 100g Cashew nuts
  • 70g shredded coconut
  • 1 tbs coconut oil
  • 1tsp vanilla pods
  • 4 dates or figs
  • juice of 3 lemon halves
  • 200g Cashew nuts
  • 5g Matcha
  • 1tbs coconut butter
  • 1tsp vanilla pods
  • 1tsp sweetener( agave juice,honey,stevia)
  • 300g Blueberries
  • 4 mint leaves

Direction:

  1. Shredder the first 6 ingredients together in a food processor
  2. Put the mixture into a baking tin
  3. Then mix the rest of the ingredients except the blueberries and the mint leaves together ina mixer.
  4. Put the mixture over the bottom layer
  5. Purée the berries and the mint leaves to make the "icing"
  6. Put in the baking tin and freeze it for min. 1 hour.
